Wholemeal Steamed Buns (Mantou) 全麦馒头

This post is about the Wholemeal steamed buns that I made last week for dinner, it's nice to eat them plain or with fillings.

Wholemeal Steamed Buns (Mantou) 全麦馒头

Recipe by: adapted from My Treasure Tasty Temptation by Chef Alan Kok, Yum Yum Publications (与我常在的好滋味)

Ingredients
  • 1 tsp Instant Dry Yeast 速發乾酵母
  • 2 tbsp Water 水
  • 100 g Plain Flour 中筋面粉
  • 200 g Wholemeal Flour 全麦面粉
  • 30 g Caster Sugar 細砂糖
  • 1/2 tsp Sea Salt 海盐
  • 180-200 ml Water 水 (refer notes)
  • 30 ml Olive Oil 橄欖油
Instructions: updated @ 20/3/2014
1. Combine yeast with 2 tbsp water, a teaspoon of plain flour and bit of caster sugar in a small bowl. Stir and rest for 5 minutes.
2. Put all ingredients (except Vegetable Oil) into a mixing bowl and mix well until rough dough formed.
3. Lastly, add in Vegetable Oil and knead into a smooth & elastic dough (non-sticky dough).
4. Roll the dough into smooth round and cover with a piece of damp towel. Rest for 15 minutes.
5. Divide dough into 11 portions (approximately 50gram each). Shape each dough into smooth round.
6. Line the dough with wax/greaseproof paper and place it well apart in the steamer.
7. Let the dough to proof in the steamer for 40 - 50 minutes or until double in size.
8. Steam over medium-high heat for 12 - 15 minutes.
9. Turn off the heat, open the lid slightly and let the buns rest in the steamer for about 5 minutes to prevent shrinkage.
10. Remove the lid carefully to prevent condensed steam from dripping on the buns. 
Note-to-self:
- First, reserved 1/3 of the water then add in slowly if the dough is too dry.
- Heat up the wok/steamer in advance.
- Cover the lid loosely with cloth to avoid steam condensation drip on the buns which causes wrinkly bun skin.
- Olive oil can be substituted with Vegetable Oil/Corn Oil.
- The buns can be steamed in two batches if not enough steamer/wok. I used a electric steamer (as shown below) and wok to do the job... :)
- I used electric mixer to do the kneading job too.


We had this Steamed Bun Burgers (wholemeal steamed buns with tuna mayo eggs fillings) for dinner, yum~yum~ 

Filling recipe:
1 canned Tuna in Olive Oil, flakes
1 Hard-boiled Egg, mashed
About 5 sticks of Imitation Crab Meat Stick, diced (optional)
Enough Japanese Mayonnaise (optional)
Dash of Ground Black Pepper
Dash of Sea Salt

Instruction: Mix all the ingredients until well combined.
